Recipes for rainy (and sunny) days: Ricotta Pie

Hace un par de semanas fue el cumple de mi papá y lo festejamos todos juntos via webcam. Preparé por primera vez en mi vida y exclusivamente para la ocasión una torta de ricota. Para serles sinceros, temí lo peor, pensé que no iba a salir bien...

A couple of weeks ago was my dad's birthday and we celebrated all together via webcam. I prepared for the occasion a Ricotta Pie. It was the first time I tried this recipe and I was a little scared as I didn't know if it would turn out ok or not.... 




Pero como siempre, en casa quedaron super contentos y comieron sin chistar (que placer que es cocinar para estos dos chicos... o será que me quieren tanto y no se animan a quejarse?). Eso si, entre los 3 no la pudimos terminar y M. la llevó a la oficina haciendo feliz a un par de sus compañeros...

La receta es un poco larga para escribirla junto a la foto (pero no se asusten, si yo pude TODOS pueden), se las dejo a continuación:

Para formar la masa: 
batir la manteca (mantequilla) a temperatura ambiente con el azúcar hasta que 
quede cremosa.
Agregar el huevo y la escencia de
vainilla y batir unos segundos más.
Tamizar la harina e incorporarla a la crema de manteca.
Formar una masa con una espátula de goma.
Unirla bien y llevar a la heladera envuelta en papel film durante una hora.

Para el relleno: 
mezclar la ricota con la crema (nata) y el azúcar hasta obtener una crema.
Agregar la ralladura y luego los huevos de a uno mientras se sigue batiendo.
Añadir el almidón de maíz e integrar con movimientos suaves.

Retirar la masa de la heladera, dividirla en dos partes iguales.
Estirar una de ellas y forrar una tartera previamente enmantecada y enharinada. Pinchar la masa con un tenedor y llevar al horno precalentado a 180° durante 12 minutos (procurando que la masa quede blanquita, que no se dore)
Una vez cocida la masa, dejarla enfriar y luego agregar el relleno.
Estirar la otra masa y forrar la tarta.
Llevar al horno unos 25'. Dejar enfriar, desmoldarla y espolvorear con azúcar impalpable.


The pie was delish just too much for the 3 of us. We couldn`t finish it so M. took it to the office and made his mates quite happy :) 

The recipe is a bit long to write next to the photo (but don't panic, If I could bake it EVERYBODY can!), you can read it here:

Beat butter (room temperature) and sugar.
Add the egg and vanilla extract and beat for a few seconds.
Sieve flour and add it to the mixture.
Knead the dough with a spatula and let it rest in the fridge for an hour.

mix the ricotta with the cream and sugar.
Add the lemon zest and the eggs (one by one) while beating.
Add the cornstarch.

Divide the dough in 2 equal parts.
Stretch the dough and line a previously greased and floured pie plate with it.
Prick the dough with a fork and bake it for 12' (365°f)
Let it cool and then add the ricotta filling
Stretch the other part of the dough and line the pie.
Bake it another 25'. Let it cool, unmold and sprinkle with powdered sugar.

    Es que en la foto parece mantequilla porque la manteca es mas blanca, no?

    Bellas fotos y esa tarta suena exquisita.

      Es mantequilla, pasa que en Argentina a la mantequilla le decimos manteca.
      Por las dudas voy a aclararlo... la proxima voy a tratar de usar un español un poco mas neutro :P
